"The Portable Gourmet"
Yellow Squash Casserole
6 cups yellow squash, coarsely chopped
1/2 cup water
1 dozen round buttery crackers, crushed
1 (3 0z.) pkg.. cream cheese softened
1 can cream of chicken soup
1 egg beaten
1/4 cup butter melted
3 med.. carrots, grated
1/2 cup onions, finely chopped
1/2 cup herb-seasoned stuffing mix
In a 2 quart casserole, combine squash and water.
Cover, microwave on HIGH 10 minutes; stir after 5 minutes.
Drain Well. Preheat oven 350
In a greased 2-quart oblong casserole put crushed crackers.
in a medium mixing bowl, combine cream cheese, soup, egg and butter.
Stir until smooth, add in squash, carrots and onions,
Spoon into prepared baking dish; sprinkle with stuffing mix.
Bake 45 minutes. Serves 8
